Hello,

Is there a way I could fix this? I checked with SSEEdit for conflicts or anything replacing RWT LOD and didn't find any:

If you're using an ENB, turn off Distant Reflections. Also turn off Sky Reflections in the INI (use BethINI).

Thank you for your help, unfortunately all that was already done so I'm afraid that's not the solution :( If I disable the ENB the problem persists

That is all that can be done. The rest of what you're seeing is the LOD water, itself. One LOD waterType for all waters is an engine limitation, so it doesn't/won't match in all spots.

Could I increase water LOD? If so, how?

The LOD water is DefaultWater, if you desire to play with the settings.

Excuse my ignorance but where should I look for this variable to play with it? I have been looking for a while and I can't find it

If you're looking for it in a plugin, it'll be in the Water tree in xEdit.
